SWEET POTATO BROWNIES

Sweet potatoes make gooey, sweet brownies. Once you have tried these, you are sure to bake them again and again!

⅔ cup olive oil, plus extra to grease

1 sweet potato, coarsely grated

¾ cup stevia

⅔ cup unsweetened cocoa powder

½ teaspoon baking powder

½ teaspoon baking soda

½ cup ground almonds (almond meal)

2 eggs, beaten

¼ cup coarsely chopped walnuts

1    Preheat the oven to 350°F. Lightly oil a shallow 7½-inch square cake pan, then line it with a large square of parchment paper, snipping into the corners diagonally, then pressing the paper into the pan so that the bottom and sides are lined.

2    Put all the ingredients in a large bowl and stir well. Pour the batter into the prepared pan. Bake for 20 minutes, or until well risen and the center is only just set.

3    Let cool in the pan for 15 minutes. Lift out of the pan using the parchment paper, then carefully remove the paper. Cut into 12 brownies to serve.
