4 extra-large eggs
¾ cup coconut milk
3 tablespoons stevia
1 teaspoon orange flower water
1 Preheat the oven to 350°F. Halve the passion fruit, scoop out the flesh from three of the halves, and push it through a strainer using the back of a spoon, to remove the seeds.
2 Crack the eggs into a large bowl. Add the passion fruit juice, coconut milk, stevia, and orange flower water, and whisk until smooth and airy.
3 Pour the passion fruit custard into four ramekins, place them in a roasting pan, and pour in hot water to reach halfway up the dishes. Bake for 40–45 minutes, or until just set.
4 Scoop the pulp from the remaining passion fruit half and spoon a little onto each dish. Serve immediately, or cover with plastic wrap and chill in the refrigerator for up to 8 hours.
