1¼ cups cold water
3 tablespoons stevia
¼ cup cocoa powder
¼ teaspoon ground allspice
4 cherries, pitted and chopped, plus 4 whole
cherries to decorate
2½ ounces bittersweet chocolate, broken into small pieces
1 Pour the water into a saucepan, then add the stevia, cocoa powder, allspice, and chopped cherries. Whisk lightly, then slowly bring to a boil over medium-high heat.
2 Remove the pan from the heat and let cool for 2–3 minutes. Stir in the chocolate, then pour the mixture into a freezerproof container, cover with a lid, and freeze for 4 hours, or until set. Stir with a fork every 30 minutes to break up the ice crystals. Put the four whole cherries in the freezer too.
3 Take the sorbet out of the freezer 10 minutes before you serve to let it soften. Scoop it into glasses or small bowls, decorate with a frozen cherry, and serve.
