NOODLES

Noodles are fabulous food the world around, but especially in China, where one has both wheat-based egg noodles in the north and rice noodles in the south. The diversity is stunning. Noodles are eaten cold and hot, stir-fried, deep-fried, boiled, and pan-fried in what I love to call a pillow. They are fun for the spirit, as well as food for the belly.

Being a mostly northern- and centrally-inclined Chinese cook, I probably devise two or three noodle dishes for every one based on rice. We go through hundreds of pounds of noodles every week at China Moon! The cooks and the customers never tire of them.
