GRILLED PEACHES
Peaches are so deliciously sweet and juicy when cooked this way; their juices mingle with the honey and orange perfectly. This makes a rather stylish dessert in minutes.

2 large ripe, firm peaches, stoned and quartered
2 tbsp clear honey
zest 1 orange and flesh chopped
200g/7oz Greek yogurt
25g/scant 1oz roasted pistachios, finely chopped
Heat a griddle pan to high, then place the peach quarters, cut-side down, and cook for 2 minutes. Gently flip and cook the remaining cut half for 2 minutes. Remove the peaches from the heat, transfer to a plate, drizzle with the honey, and sprinkle over the orange zest and chopped flesh.
Divide the yogurt between 4 bowls, spoon over the peaches, orange pieces, and any juices, and scatter with the pistachios.
