Simple Sponge Cake
The recipe mentioned in the story is one I found in my grandmother’s 1930, handcrafted cookbook. Following, please find my three-ingredient version. It’s as easy as one—two—three!
Ingredients
3 eggs, whipped until foamy
1/2 cup superfine sugar (or granulated sugar may be substituted)
2/3 cup self-rising flour (or all-purpose flour plus 1 teaspoon baking powder and 1/3 teaspoon salt may be substituted)
Directions
Preheat the oven to 375 degrees F. Grease an 8- or 9-inch round cake pan.
Using a medium bowl, gradually add the sugar to the eggs until fluffy. Fold in the flour. Pour into the greased cake pan.
Bake 20 minutes or until the cake springs back when lightly pressed.
Do not open the oven during baking. If the heat escapes quickly, the cake will fall.
Place the pan over a wire rack until cool.
Optional: Serve with whipped cream and berries, jam, or lemon curd.
