Mother’s Soft Gingerbread

Ingredients

2 eggs, lightly beaten

1 cup dark brown sugar (*granulated sugar plus 2 tablespoons molasses may be substituted)

¾ cup butter or shortening, melted

¾ cup molasses

3 cups flour, sifted

1 teaspoon soda

1 teaspoon ginger

1 teaspoon cinnamon

¼ teaspoon salt, or to taste

1 cup sour milk (*milk plus 1 tablespoon vinegar or lemon juice may be substituted)

Directions

Preheat oven to 350 degrees F. Generously grease and flour an 8-inch square baking pan.

Combine the beaten eggs with the brown sugar, shortening, and molasses. Sift the flour and blend with the spices. Alternating, add the egg mixture and milk to the flour mixture. Beat until smooth.

Pour the batter into baking pan. Bake for 45 to 50 minutes, or until the gingerbread springs back when lightly touched.

Optional: Top with whipped cream.
