Yields about 1 cup (237 ml)

INGREDIENTS

  1 medium red onion, peeled and thinly sliced

  Kosher salt to taste

  Juice of 6–7 limes

DIRECTIONS

  Place the onion in a nonreactive bowl.

  Season with salt and lime juice to taste.

  Mix well. Let sit for 15 minutes.

  Toss and allow to rest an additional 15 minutes before serving.
