To the endless confusion of many, allspice berries are referred to as “pimento” in Jamaica. The small round berries are also called Jamaican pepper and have the flavor and scent of a mix of cinnamon, clove, and nutmeg—hence the name allspice. They are the basis for the liqueur that is prepared by Sangster’s in Jamaica and called Pimento Dram. This is not as complex as Sangster’s mixture, but it is an infusion of allspice berries and other aromatics that makes for a nice after-dinner sipping rum.
makes 1 liter
One 1-liter bottle amber rum, such as Appleton Estate Special Gold
1 teaspoon allspice berries, crushed
One 4-inch stick cinnamon
1 vanilla bean, split lengthwise
4 whole cloves
teaspoon freshly grated nutmeg
Pour out about ½ cup of rum and reserve for another use. Add the remaining ingredients to the bottle of rum. Cork lightly and allow it to macerate in the sun for 2 to 3 months. When ready to serve, strain it into a decanter and pour.
