“In Case of Emergency” 1-Minute Microwave Brownie

A fan once requested a recipe for a cake made without an oven, something I initially thought impossible. But then it dawned on me: Why not use a microwave? It took a lot of experimentation, but once I perfected the recipe, it turned out to be the most requested recipe I’ve ever created. It’s fudgy and chocolaty, and the only hard part is stopping yourself from eating it while it’s still too hot. Many people have been skeptical, but all I can say is, you will be pleasantly surprised. It’s really good, and you don’t need to worry about eating too much because it makes only one serving!

Makes 1 mug brownie

1 In a medium microwavable mug, mix together the flour, brown sugar, cocoa powder, and salt.

2 Pour in the oil, water, and vanilla and mix until just combined. Stir in the chocolate chips. (If you don’t want to cook the brownie straight away, you can refrigerate it for up to 24 hours at this point; the cooking time will be the same.)

3 Microwave for 45 to 60 seconds, until risen and firm to the touch. This timing is based on my 1,200-watt microwave, so your timing may vary. Always keep a close eye on your mug while it’s in the microwave so the brownie doesn’t overcook.

4 Serve warm, with vanilla ice cream.
