Confetti Mug Cake

Did you have a great day at work, or do you simply want to share something sweet with someone special? These festive little cakes are just right for a party of two. This is where self-rising flour comes in handy, keeping these mini treats light. You won’t believe these cakes could come out of a microwave until you make them yourself.

Makes 2 mug cakes

1 Place the butter in a large microwavable mug and microwave for 20 to 30 seconds, until melted.

2 Add the egg and whisk well. Add the milk, vanilla, and sugar and stir to combine.

3 Add the flour and sprinkles and stir with a fork until smooth.

4 Divide the batter between two mugs. (If you don’t want to cook the cakes straight away, you can refrigerate them for up to 24 hours at this point.)

5 Microwave each mug separately for 50 seconds, or until the cake is risen and firm on top. This timing is based on my 1,200-watt microwave, so your timing may vary. Always keep a close eye on your mug while it’s in the microwave so the cake doesn’t overcook. Let cool completely before frosting.

6 Once cooled, pipe or spread a swirl of Birthday Cake Buttercream Frosting onto each cake, decorate with sprinkles, and enjoy!
