Chocolate Cake with Peanut Butter Buttercream
I am haunted by the luxuriously rich combination of chocolate and peanut butter. This isn’t the last time you’ll hear me rave about this match made in heaven. A prime example of how well the flavors go together, this cake is nothing short of a modern classic.
MAKES two 9-inch layers; serves 8 to 16
INGREDIENTS
Super-Rich Chocolate Cake, prepared as directed through step 7
½ cup (70g/2.4oz) chopped peanuts
½ cup (80g/2.8oz) mini chocolate chips
To assemble and decorate the cake, place one cake layer top side up on a cake turner. Use an icing wand to evenly spread 1 cup buttercream over the surface. Add the second layer top side up. Using an icing wand, spread about 1 cup buttercream on the top and about 1½ cups on the sides. Once the buttercream is evenly applied and smooth, use the icing wand to create a rustic look by swirling the wand unevenly around the cake, with a spackling motion. Sprinkle with chopped peanuts and mini chocolate chips.
