Garlic and orange marinated olives
{ MAKES 500 G [1 LB 2 OZ] }
These marinated olives are a super way to turn a regular olive into something you might find in a swanky city bar, all with minimal effort and a few everyday ingredients. Mix these up for your next family gathering – and be prepared to share the recipe, because it will be a talking point!
500 g (1 lb 2 oz) drained kalamata olives
4 rosemary sprigs
4 thyme sprigs
4 garlic cloves, peeled and halved
peel of 1 orange, no pith, cut into wide strips
flesh of ½ orange, roughly chopped
extra virgin olive oil, to cover
Combine all the ingredients except the olive oil in a medium bowl, then transfer to a screw-top preserving jar. Pour in enough olive oil to cover and seal tightly.
Marinate in the fridge for at least 1 hour before enjoying. They’ll keep in the fridge for 1 week.
