Balsamic vinegar
Preheat a grill or griddle pan.
Cut the radicchio into halves through the stalk, then cut each half into eight segments through the stalk to keep the leaves attached.
Put the radicchio on the grill briefly, just to wilt. Remove and place in a serving dish.
Season generously and drizzle with lemon juice, olive oil and balsamic vinegar.
Try serving Grilled radicchio with Grilled scallops (see here) – the bitter flavour contrasts with the sweetness of the scallops.
