Oranges 8
Lemon 1
Caster sugar 200g
Double cream 500ml
Grand Marnier 4 tbs
Finely grate the rind of the oranges and the lemon, and put in a bowl. Add the juice of 2 oranges and leave to steep.
Squeeze the juice of the remaining oranges, combine with the sugar and cook to reduce to a thick syrup. Cool.
Whip the cream to soft peaks. Stir in the reserved juice and rind to the syrup. Add the juice of the lemon, and stir into the cream. It will immediately thicken. Add the Grand Marnier.
Freeze in a shallow container, stirring every ½ hour or so, or churn in an ice cream machine.
