BEEF ROLLS
Deeply aromatic and rich with meat juices, this starter will please any meat-lover.
INGREDIENTS
Beef fillet
Brandy
Lean pork or chicken breast
Crabmeat
Straw mushrooms
Cooking oil
Chinese lettuce leaves
SEASONING
Chicken seasoning powder
Ground white pepper
Salt
DIPPING SAUCE (COMBINED)
Fish sauce
Coconut juice
Sugar
Vinegar
Garlic
Red chilli (optional)
1 kg (2 lb 3 oz)
1 tsp
450 g (16 oz / 1 lb), minced
100 g (3½ oz)
200 g (7 oz), finely chopped
2 Tbsp
300 g (11 oz), washed and drained
4 tsp
1 tsp
1 tsp
1 Tbsp
2 Tbsp, or boiled water
1 tsp
1 Tbsp, or lemon juice
1 clove, peeled and minced
1 or to taste, minced
Brandy not only imparts
flavour to the beef slices, but
also tenderises them.
Roll up beef slice with
moderate firmness. If too
loose, the roll will fall apart.
If too tight, the filling will
squeeze out on either side.
When threading beef rolls
onto skewers, be mindful to
thread through the outer
ends of the slices so as to
secure.
