FRIED LEMON GRASS CHICKEN
Chicken pieces are dyed bright yellow by turmeric and flavoured by aromatic lemon
grass and garlic.
INGREDIENTS
Chicken pieces
Cooking oil
Minced garlic
Coriander leaves (cilantro)
(optional)
1 kg (2 lb 3 oz), washed and cut into bite-size
pieces
125 ml (4 fl oz / ½ cup)
1 tsp
for garnishing
MARINADE (COMBINED)
Minced lemon grass
Chicken seasoning powder
Turmeric powder
Minced red chilli
Salt
3 Tbsp, use hard stalk only and bruise to
release fragrance before mincing

METHOD
▪ Marinate chicken pieces for 30 minutes to 1 hour.
▪ Heat oil in a frying pan until hot, then add garlic and fry until fragrant.
▪ Add marinated chicken and cook until golden brown.
▪ Garnish if desired and serve.
Using a meat cleaver, cut
chicken into smaller, bite-
size pieces.
Slice bruised lemon grass
stalks across for small
rounds to put into a blender
to mince.
In a bowl, stir chicken
pieces and marinade until
well mixed.
