SPIRITS

I love filling my liquor cabinet with base alcohols that I flavour myself. It takes a bit of patience because you have to wait for the flavour to permeate, but the joy is in watching the colour from the fruit or spices bleed into the alcohol.

750ml gin or vodka

assorted fruit or spices, some of my favourites include:

3 vanilla pods

10 whole raspberries

6 whole blackberries

20 whole blueberries

5 figs, halved or quartered

10 cocoa beans or 30ml cocoa nibs

3 pieces stick cinnamon

1.     Place the fruit or spices into the alcohol (push down on the fruit if necessary) and close the bottle. Leave to steep for 2 months before serving.
