Cheesy Bacon Casserole

Makes 4 servings

4 slices white bread, crusts trimmed

4 eggs, beaten

1-1/2 c. milk

1 t. dry mustard

1/2 t. dried, chopped onion

8 slices bacon, crisply cooked and crumbled

1 c. shredded Cheddar cheese

Arrange bread slices in a lightly greased 8"x8" baking pan; set aside. Stir together eggs, milk, mustard and onion; pour over bread. Sprinkle with bacon; cover and refrigerate 8 hours or overnight. Let stand at room temperature for 30 minutes; uncover and bake at 350 degrees for 20 to 25 minutes. Sprinkle with cheese and bake an additional 5 minutes, until cheese melts.
