Mom’s Sloppy Joes

Makes 8 to 10 servings

1 lb. ground beef

1/2 c. onion, chopped

1/2 c. celery, thinly sliced

1-1/2 c. catsup

1/4 c. brown sugar, packed

1 T. vinegar

1-1/2 T. mustard

salt and pepper to taste

8 to 10 sandwich buns, split

Brown beef with onion and celery in a skillet; drain and set aside. Mix remaining ingredients except buns; add to beef mixture. Bring to a boil; reduce heat and simmer until thoroughly warmed. Spoon onto buns to serve.

Homemade coleslaw...scrumptious! Blend a bag of shredded coleslaw mix with 1/2 cup mayonnaise, 2 tablespoons milk, one tablespoon vinegar and 1/2 teaspoon sugar. For a yummy variation, toss in some pineapple tidbits or mandarin oranges. Chill before serving.
