Makes 6 mini loaves
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. ripe banana, mashed
1-1/4 c. cake flour
3/4 t. baking soda
1/2 t. salt
In a large bowl, blend shortening and sugar well. Add eggs, one at a time, beating well after each; stir in banana and set aside. Stir together flour, baking soda and salt in a separate bowl; add to shortening mixture and mix well. Pour into 6 greased 5-1/2"x3" mini loaf pans. Bake at 350 degrees for 40 to 45 minutes.
Making butter is fun for kids. Pour a pint of heavy cream into a chilled wide-mouth jar, cap the jar tightly and take turns shaking until you see butter begin to form. When it’s done, uncap the jar and rinse the butter lightly with cool water. Enjoy on warm, fresh-baked bread...scrumptious!
