Grandma’s Buttery Mashed Potatoes

Serves 8 to 12

6 to 8 potatoes, peeled and cubed

1/2 c. butter, softened

1 c. evaporated milk

salt and pepper to taste

Cover potatoes with water in a large saucepan; bring to a boil over medium-high heat. Cook until tender, about 15 minutes; drain. Add remaining ingredients. Beat with an electric mixer on medium speed until blended and creamy.

There are so many ways to serve mashed potatoes! Spoon them over a casserole for a quick shepherd’s pie, turn them into crispy potato pancakes or scoop into a bowl and top with gravy, chopped chicken and corn for a homestyle dinner-in-a-bowl.
