Makes 8 to 10 servings
32-oz. pkg. frozen diced potatoes, thawed
16-oz. container sour cream
1 onion, chopped
8-oz. pkg. shredded Cheddar cheese
10-3/4 oz. can cream of celery soup
3/4 c. butter, melted and divided
2 c. corn flake cereal, crushed
In a large bowl, stir together potatoes, sour cream, onion, cheese, soup and 1/4 cup butter. Pour into a greased 13"x9" baking pan. In a separate bowl, toss cereal and remaining butter together; spread over top of casserole. Bake, covered, at 350 degrees for one hour and 15 minutes. Uncover and bake for an additional 15 minutes.
