Serves 6 to 8
1/2 c. bacon drippings
2 to 2-1/2 lbs. green beans, cut lengthwise
salt and pepper to taste
Melt drippings in a large cast-iron skillet; add beans. Simmer on low heat, covered, for 3 to 4 hours, stirring 3 to 4 times to cook evenly. During the last 30 minutes, uncover and brown lightly. Add salt and pepper to taste.
Look for heirloom fruits & vegetables at farmers’ markets...varieties that Grandma & Grandpa may have grown in their garden. These fruits and veggies don’t always look picture-perfect but their flavor can’t be beat!
