Serves 8 to 10
1 c. celery, chopped
1 onion, chopped
1/4 c. butter
1-1/2 c. cooked rice
10-oz. pkg. frozen chopped broccoli, thawed
8-oz. can sliced water chestnuts, drained
10-3/4 oz. can cream of mushroom soup
8-oz. jar pasteurized process cheese sauce
In a saucepan over medium heat, sauté celery and onion in butter. Stir in remaining ingredients; spread in a greased 13"x9" baking pan. Bake, uncovered, at 350 degrees for 45 minutes.
To cover or not to cover? A casserole that’s baked uncovered will have a crisper, more golden topping than one that’s covered during baking...it’s your choice.
