Makes 4 dozen
2 c. butter, softened
1-1/3 c. sugar
2 eggs, beaten
2 t. vanilla extract
5 c. all-purpose flour
Garnish: colored sugar
Blend butter and sugar together; stir in eggs and vanilla. Add flour; mix until well blended. Form into a ball; cover and chill for 4 hours to overnight. Roll out dough 1/4-inch thick on a lightly floured surface; cut out with cookie cutters as desired. Arrange cookies on lightly greased baking sheets. Bake at 350 degrees for 8 to 10 minutes, until golden. Frost cookies when cool; decorate as desired.
Frosting:
Combine all ingredients in a medium bowl. Beat with an electric mixer on low speed until smooth.
