Double-Chocolate Brownies

Makes one dozen

3 1-oz. sqs. unsweetened baking chocolate

6 T. butter

2/3 c. all-purpose flour

1/8 t. salt

1-1/3 c. sugar

3 eggs, beaten

1 t. vanilla extract

3/4 c. semi-sweet chocolate chips

Melt together unsweetened chocolate and butter in a small, heavy saucepan over low heat. Stir until smooth; remove from heat and let cool slightly. Stir together flour and salt; set aside. Gradually stir sugar into cooled chocolate mixture. Add eggs and vanilla; stir just to combine. Fold in flour mixture. Spread in an 8"x8" baking pan sprayed with non-stick vegetable spray. Sprinkle with chocolate chips; bake at 325 degrees for 30 to 35 minutes. Use a knife to spread melted chips over the surface. Let cool; cut into squares.

Serve brownie sundaes for an extra-special treat. Place brownies on individual dessert plates and top with a scoop of ice cream, a dollop of whipped topping and a cherry. Yummy!
