LEAFY GREEN PESTO
INGREDIENTS:
- 4 cups densely packed fresh leafy greens (or use basil, parsley, arugula, spinach, cilantro, dandelion greens, wild mustard, or any combination of these)
- ⅓ cup raw sunflower seeds
- ⅓ cup olive oil
- 2 tablespoons mellow white miso
- 2 tablespoons lemon juice
- 2 tablespoons nutritional yeast
- ½ teaspoon black pepper
PROCEDURE:
Place all ingredients in a food processor and blend. For a chunkier pesto, be careful not to overblend.
Serves 4–6
