Firstly we would like to thank all the customers who have come through the doors of Bourke Street Bakery over the years. It is because of you that we have had the opportunity to write this book and continue to do what we love — we truly appreciate your support. Thanks particularly to those of you who come back to the Bakery nearly every day for your favourite product. You are part of the Bourke Street Bakery community and we are very honoured to have you as part of the clan.

Thanks to all the staff, past and present, who have served these lovely customers.

Our bakers, chefs, pastry chefs and kitchen hands work around the clock to produce what we believe are some of the best bakery products in Australia/the world. We thank you for your hard work and skill; from the first day we have said our product is king, and we hope you feel that dedication to craft and belief in creating something that is real and tasty. Big ups to Niccolo and Steph who lead this team of devoted professionals.

A huge thank you to our managers who lead their teams in presenting our baked goods and delivering great service. To ensure there is communication between all our bakeries, suppliers and staff we have a wonderful team working in Head Office, especially Annie, Lauren, Olivia, Sonia, Hanna, and Nat. They work tirelessly every day to make sure all the bills are paid and all the teams are happy. Thank you.

A very special thanks to Tim Cooper, who has worked diligently to test, tweak and perfect many of the recipes in this book — we are pretty sure we would not have a book without you. Thank you!

A big thank you to all our suppliers who have made it possible to produce all our wonderful breads and pastries.

Big love to Alan Benson and David Morgan for the amazing photography in this book. We hope it’s been fun… food should be shared and leap from the page into your mouth, and we think we achieved that.
