CHAPTER TWO
COOKIES & BISCUITS
This chapter is rather long — but believe it or not, we actually had to cut it back! Cookies and biscuits are everyone’s favourites, and while they may seem like a simpler thing for a novice baker to tackle, you still have to behave a little like a quasi-scientist when making them. When you put that flattened ball of raw dough into a hot oven, you are setting off a series of chemical reactions, and every tweak you make will engineer your cookie or biscuit to be softer, chewier or more brittle — so do make sure you are exacting with your process.
