DELUXE TRUFFLES

1 quantity Chocolate truffle mix

500 g (1 lb 2 oz) Tempered chocolate

Cover the bowl of chocolate truffle mix with plastic wrap and refrigerate for 2 hours, or until firm.

Lay a sheet of baking paper on a work surface. Spoon the truffle mixture onto the baking paper and lay another sheet on top. Roll into a rectangular shape about 5 mm (ΒΌ inch) thick, using a rolling pin. Place on a tray and chill for 1 hour.

Remove the baking paper from the top and spread the truffle with a thin layer of tempered chocolate. Chill for 30 minutes, until almost set. Cover again with baking paper, then flip the whole thing over. Spread the top with a thin layer of tempered chocolate, then refrigerate until set.

Remove the baking paper and cut to your desired shapes.
