POWER BALLS

Packed with superfoods, these truffle-size balls are a mighty mixture of show-release carbohydrates, protein, and minerals. They’re great for lunch bags in place of chocolate.

3 ounces semsiweet chocolate

¼ cup sunflower seeds

¼ cup flaxseed

¼ cup sesame seeds

¾ cup Brazil nuts, coarsely chopped

6 Medjool dates, pitted

⅓ cup dried goji berries

1 teaspoon ground cinnamon

1 tablespoon maca (see Super Ingredients)

½ cup dry unsweetened coconut flakes

⅓ cup plus 1 tablespoon maple syrup

1 Break 2 ounces of the chocolate into pieces and reserve the rest. Put the sunflower seeds, flaxseed, sesame seeds, Brazil nuts, and chocolate into a food processor and process until finely ground, scraping down the sides of the processor once or twice.

2 Add the dates, goji berries, cinnamon, maca, and ⅓ cup of the coconut, then spoon in the maple syrup. Process until you have a coarse paste.

3 Using a measuring spoon, scoop out tablespoons of the mixture onto a plate, then shape them to make 20 mounds. Roll them into balls.

4 Put the remaining coconut on one plate and finely grate the remaining chocolate onto another plate. Roll half the balls in the coconut and the rest in the chocolate. Pack into an airtight container and store in the refrigerator for up to three days.

Dates are high in fiber and are a good source of potassium, calcium, iron, phosphorus, manganese, copper, and magnesium. They are thought to help prevent some cancers and intestinal diseases.
