2 tablespoons lime juice
1 tablespoon honey
2 tablespoons chopped fresh dill
4 (4-ounce) salmon fillets
salt and pepper, to taste
1 pound new potatoes, boiled, to serve (optional)
salad greens, to serve
MANGO AND LIME SALSA
1 mango, pitted, peeled, and cut into cubes
finely grated zest and juice of 1 lime
2 tablespoons dry unsweetened coconut
1 Preheat the broiler to medium–high and line the broiler rack with aluminum foil.
2 Put the lime juice, honey, and half the dill in a wide bowl and mix well. Season with salt and pepper. Add the salmon and turn to coat in the glaze. Arrange the salmon on the broiler rack, then broil, turning once, for 8–10 minutes, or until browned and the fish flakes easily when pressed with a knife.
3 Meanwhile, to make the salsa, put the mango, lime zest and juice, coconut, and remaining dill in a small bowl and mix well.
4 Serve the salmon, topped with the salsa, with the potatoes, if using, and salad greens on the side.
