But wait? Doesn’t horta mean greens? You want me to drink the greens?
In a way I do recommend you drink your greens, but not necessarily in a literal sense. Let me explain. Drinking the horta (for our purposes) means: drink the cooking water left over from boiling your vegetables. Need an example? If you boil or even steam broccoli, don’t throw the cooking water down the sink; pour it in a glass and drink up! Or save it to make soup stock.
But why would you ever do that? You do this because when you boil vegetables, important vitamins and minerals are leached into the cooking water. Cooked vegetables are often (not always) left less nutritious than raw. Now the cooking water contains the good stuff. So don’t turn up your nose when someone tells you to “drink the horta!”
