Tomato Sambar with Spaghetti Squash “Rice” and Nut Chutney

Spaghetti squash “rice”


1 small spaghetti squash
1 tbsp rice vinegar or apple cider vinegar
¼ cup hemp seeds or flax seeds
1 tsp olive oil (use extra virgin olive oil)
½ tsp sea salt
¼ tsp cinnamon
¼ tsp powdered ginger
¼ tsp curry powder
¼ tsp sambar powder


Tomato sambar


2 large tomatoes
6 sun dried tomatoes
1 clove of garlic
1 tsp sambar powder
½ tsp curry powder
1 tsp balsamic vinegar or red wine vinegar
