Spicy Almond Kelp Noodles

Ingredients:

 

1 small package of kelp noodles, soaked until soft
2 cups julienned carrots

 

The sauce:

 

1 cup almond butter
1 cup cherry tomatoes, halved
1 clove of garlic
¼ cup sesame oil
¼ cup tamari or soy sauce
1 tbsp miso paste
1 tsp chili paste (your choice)
juice of 1 lime
a small piece of ginger (about 1/4”), crushed
a pinch of salt

 

Preparation:

 

Place the soaked kelp noodles and julienned carrots in a large bowl. Add all of the other ingredients to a food processor and blend until they form a smooth paste. Pour over the noodles and carrots and mix well to combine. Serve at once.
