Carrot – Tomato Soup

Ingredients:

 

2 medium sized tomatoes
2 medium sized carrots
½ of a medium yellow onion
2 cloves of garlic
4 tbsp olive oil
salt, black pepper and red pepper flakes, to taste

 

Preparation:

 

Combine all of the ingredients in a food processor or blender until they form a smooth puree. Season the soup with salt, black pepper and red pepper flakes to taste and serve.

 

Raw Kale Slaw with BBQ Walnuts

Ingredients:

 

3 cups shredded cabbage (red or green, your choice)
2 ½ cups shredded kale
1 cup shredded carrot
½ cup red onion, sliced very thin
1 tsp celery seeds

 

Dressing:

 

1/3 cup raw sunflower seeds, soaked for 4+ hours, drained and rinsed
1/3 cup raw cashews, soaked for 1+ hour, drained and rinsed
¼ cup water
2 tsbp olive oil
2 tbsp apple cider vinegar
1 tsp honey or maple syrup
1 tsp salt
