Eggs with Kale

Ingredients:

 

4 large eggs
4 kale leaves
a little olive oil for frying
a pinch of salt
black pepper, to taste

 

Preparation:

 

Add the kale, eggs and salt to a blender and blend on high speed until smooth while you heat a little olive oil in a skillet over medium heat. Once the oil is hot, pour the egg and kale mixture into the skillet and cook for a minute, then scramble; continue cooking the eggs until they’re as done as you prefer them. Serve at once.
