Cucumber – Blueberry Smoothie

 

Number of servings: 2 – 4, depending on serving size

 

Ingredients:

 

2 large cucumbers, peeled and diced
1 cup frozen blueberries
1 cup of coconut milk
juice of 1 lemon or lime

 

Preparation:

 

This is perhaps the easiest recipe in the entire book. Just put all of the ingredients in a blender, blend until smooth and serve.
