25ML/1OZ ROSÉ VERMOUTH
75ML/3OZ PINK GRAPE FRUIT JUICE
SODA WATER
FEW DROPS GRAPEFRUIT BITT ERS (OPTIONAL)
Stir together the vermouth and grapefruit juice over ice in whatever glass you think might suit. Top up with soda water and add grapefruit bitters to taste, if liked.
ROSÉ VERMOUTHS are a fairly new innovation, combining the red-berry fruitiness of their red cousins with the freshness of their white ones. Try Regal Rogue Wild Rose, Belsazar Rosé or Cocchi Rosa in this. I’m not a massive fan of fruit juices in aperitifs but here pink grapefruit adds its own pleasing bitterness and the soda stops it being too sticky.
