In honour of Reenie’s parsnip harvest, I have searched out a genuine recipe from the Ministry of Food for Parsnip Patties

 

Ingredients

 

1 Ib cooked parsnips

Tablespoon of Plain Flour

Teaspoon of mustard powder/mustard (optional)

Salt and Pepper

Vegetable Oil – or any other fat – for frying

 

Method

 

Slice off top and bottom of parsnips, then chop into even sized chunks.

Add the parsnips to a saucepan of water and bring to the boil. Cook until soft – about 10 mins.

Drain and set aside for a few minutes to dry

Mash parsnips with potato masher

Add flour, salt, pepper and mustard

Form into 12 chunky patties

Heat oil in frying pan and fry for 4-5 mins each side
