SERVES 6 PREPARATION TIME: 5 MINUTES
Grate 1 cm (1/2 inch) of horseradish root into a bowl (or use 1 teaspoon horseradish cream, from an organic food store) and combine it with 2–3 tablespoons of mayonnaise. Add 200 g (7 oz) tuna in oil, drained and flaked, then process the mixture to a smooth cream. Split open 6 panini and spread them with the tuna mixture.
VARIATION
In winter, add coarsely chopped radicchio tardivo to this panino.
