CARCIOFI SALTATI

SAUTÉED ARTICHOKES

For enjoying with pasta, risotto or as a side dish.

SERVES 6 PREPARATION TIME: 15 MINUTES COOKING TIME: 10 MINUTES

Trim 12 small artichokes as explained, then cut them into quarters. Heat 3 tablespoons of oil in a frying pan with 1 garlic clove (remove after cooking). Pan-fry the artichokes on high heat, stirring. After 2 minutes, add 21/2 tablespoons of stock or water, season with salt and finish cooking on medium heat, for about 5 minutes. Sprinkle with chopped parsley. The artichokes should stay crisp!
