Spicy Salad with Mustard and Balsamic Vinaigrette

This salad makes a perfect partner to rich main dishes, like lasagna, because its bitter greens and zesty vinaigrette help to cut the richness.

tablespoons extra-virgin olive oil

teaspoons balsamic vinegar

tablespoon Dijon mustard

teaspoon finely minced shallot

teaspoon ground black pepper

cups spicy greens, such as arugula, watercress, mizuna, and baby mustard greens, washed and dried

Whisk the oil, vinegar, mustard, shallot, salt, and pepper together in a bowl until combined. Place the greens in a large bowl, drizzle the dressing over the greens a little at a time, and toss to coat evenly, adding more vinaigrette if the greens seem dry. Serve.
