TRIMMING AND CORING FENNEL

1. Cut off the stems and feathery fronds.

2. Trim a very thin slice from the base of the bulb and remove any tough or blemished outer layers.

3. After cutting the bulb in half through the base, use a small, sharp knife to remove the pyramid-shaped core. Slice or chop the fennel as directed.
