MAKING CHICKEN CUTLETS
Packaged chicken cutlets from the supermarket can be ragged or uneven in thickness. You can easily make your own using boneless, skinless chicken breasts.
1. Remove tenderloin from underside of breast if necessary. Lay chicken smooth side up on cutting board. To make cutlets, place your hand on top of chicken and carefully slice it in half horizontally.
2. Separate breast to yield 2 cutlets between ⅜ and ½ inch thick. If necessary, pound to even thickness.
