MAKES ABOUT 1⅓ CUPS
1 |
cup pineapple juice |
2 |
cups packed brown sugar |
1 |
(1-inch) piece fresh ginger, grated (about 1 tablespoon) |
1 |
tablespoon red pepper flakes |
Bring the pineapple juice, brown sugar, ginger, and red pepper flakes to a boil in a small saucepan over high heat; reduce the heat to medium-low and simmer until syrupy and reduced to about 1⅓ cups, 5 to 7 minutes. (The glaze will thicken as it cools between bastings; cook over medium heat about for 1 minute, stirring once or twice, before using.)
