Orange, Cinnamon, and Star Anise Glaze

cup juice plus 1 tablespoon grated zest from 2 large oranges

cups packed brown sugar

pods star anise

(3-inch) cinnamon stick

Bring the orange juice, zest, brown sugar, star anise, and cinnamon stick to a boil in a small nonreactive saucepan over high heat; reduce the heat to medium-low and simmer until syrupy and reduced to about 1⅓ cups, 5 to 7 minutes. (The glaze will thicken as it cools between bastings; cook over medium heat for about 1 minute, stirring once or twice, before using.)
