Tangerine and Ginger Relish


MAKES ABOUT 1¼ CUPS

tangerines, rind and pith removed and segments cut into ½-inch pieces (about 1 cup)

1

scallion, sliced thin (about ¼ cup)

teaspoons minced or grated fresh ginger

teaspoons juice from 1 lemon

teaspoons extra-virgin olive oil

Table salt and ground black pepper

1. Place the tangerines in a fine-mesh strainer set over a medium bowl and drain for 15 minutes.

2. Pour off all but 1 tablespoon tangerine juice from the bowl; whisk in the scallion, ginger, lemon juice, and oil. Stir in the tangerines and season with salt and pepper to taste.
