Fresh Tomato Relish


MAKES ABOUT 1½ CUPS

pound ripe tomatoes, cored, seeded, and cut into ¼-inch dice (about 1½ cups)

tablespoons chopped fresh basil leaves

small shallot, minced (about 1 tablespoon)

tablespoon extra-virgin olive oil

teaspoon red wine vinegar

small garlic clove, minced or pressed through a garlic press (about ½ teaspoon)

Table salt and ground black pepper

Combine the tomatoes, basil, shallot, oil, vinegar, and garlic in a medium bowl. Season with salt and pepper to taste.
